Are you ready for breakfast? How about some pancakes?
Not just any pancakes though! Pumpkin pancakes! They’re not only delicious, but the kids can help you make them! :)
I am so excited to get this new Kids in the Kitchen series started! (Technically, it was supposed to start yesterday but we’ve all been a little under the weather and time just slipped away from us).
One thing we have always struggled with as far as Nicholas’ sensory issues go, is getting him to try new foods, to eat something, anything that is not considered some sort of dry cracker. He has a few foods that seem to constantly be on rotation and I’ve been trying my best to get him to branch out a little bit and add a little more diversity to his diet and I think getting him in the kitchen more to help make the food is going to be a big help.
Since this week’s theme was breakfast, we decided to make one of his favorite breakfast foods but add a little twist to them (read: sneak a little nutritional value into them).
Making them is super simple!
You’ll need:
1 1/4 cup Flour
2 Tbs. Sugar
2 tsp. Baking Powder
1/2 tsp. Cinnamon
1/2 tsp. Ginger
1/2 tsp. Salt
1/8 tsp. Nutmeg
1/8 tsp. Cloves
1 cup Milk
6 Tbs. Pumpkin
2 Tbs. Melted Butter
1 Egg
Add all of your dry ingredients into a large bowl and let your child mix them all together. If they’re a bit older, you can even let them measure the ingredients out before putting them in the bowl.
Once your dry ingredients are all mixed together, go ahead and add your milk, butter, egg, and pumpkin and give it all a good stir. You should now have a pancake batter consistency. See! Super easy :)
Get your griddle nice and hot (adult duty here!), give it a good spray with your favorite non-stick cooking spray and pour our your pancake.
Let them cook for just a couple of minutes on each side just as you would with regular pancakes.
Now top with some delicious sticky syrup and enjoy! Minion jammies and all :)
