Over the past couple of weeks however, I have been on a quest to find a few healthier options that they will actually want to eat.
We’ve had a few recipes go okay and a couple that have completely flopped but then, we hit the jackpot.
This Garlic Parmesan Chicken was devoured by the entire family and moms, you know just how hard it is to find something that everyone will eat!
Whether you’re looking for a healthier chicken option for your kids or you’re just looking to shake up your dinner routine a bit, you’ve come to the right place!
The best part? Clean up is a breeze! One bowl, one pan and boom, you’re done! It gets even easier if you line your pan with aluminum foil 🙂
And did I mention that it is absolutely delicious?! The chicken comes out incredibly juicy and the added crunch from the Progresso Panko bread crumbs tops it all off! Your kids are going to love it 🙂
Ready for the recipe? With only 5 minutes of prep time, you can get dinner in the oven and go back to enjoying your evening!
To make this garlic Parmesan chicken, you’ll need:
- 4 boneless skinless chicken breasts
- 1/2 cup Mayonnaise
- 1/2 cup shredded Parmesan cheese
- 1/2 – 1 cup Progresso Panko Bread Crumbs
- 1/2 tsp. garlic powder
- Salt and pepper to taste
To start, either spray or cover in a foil a baking dish for your chicken and preheat your oven to 400°.
In a small bowl, mix together your mayo, garlic powder and Parmesan cheese. Spread this mixture evenly over your chicken, sprinkle with salt and pepper to taste and bake for 15-20 minutes.
At 20 minutes or so, remove your chicken from the oven and cover each piece of chicken (just sprinkle it over the top) in bread crumbs. Return your dish to the oven for an additional 20 minutes or until your chicken is cooked thoroughly and the juices run clear.
Your chicken should be browned and ready to eat but if you’d like to brown it up just a bit more, you can stick in under the broiler for a minute or two if desired.
We served ours with fresh green beans and some roasted potatoes and I don’t think I’ve ever seen my kids eat so much! This one is definitely going down in the books as a new family favorite!
