The month of April is known for a lot of things. Rain showers, the start of spring and, in case you did know, it is also National Soyfoods Month.
Now soy foods, they’re kind of a staple in our house. With multiple food allergies, including dairy and peanuts, finding a soy substitute is a must when it comes to a lot of foods.
And of course, that includes desserts as well!
Personally, when it comes to cookies, I’ll choose peanut butter every time. I mean, they’re delicious, right?
But, now that we have a child with a peanut allergy, you won’t find any hanging out in our house. So, what’s a peanut butter cookie loving mama to do?
When I first heard about Don’t Go Nuts Soy Nut Butters, I have to admit, I was a little skeptical. It’s not the same thing so it can’t possibly taste anything like peanut butter can it?
In fact, baked into these delicious cookies, you’d never know the difference!
The best part? While they’re baking, your entire house will smell amazing!
And making them? Super simple! We just swapped out the peanut butter in one of our favorite cookie recipes for some of the Slightly Sweet soy nut butter (this is the variety that is closest to the classic peanut butter taste) and whipped them up. They literally took 10 minutes to throw together!
Ready to make a batch of your own? Come on, you know you want to!
- 1/2 cup butter
- 1/2 cup Slightly Sweet Soy Nut Butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 1/4 cups flour
- 3/4 tsp. baking soda
- 1/4 tsp. salt
Pre-heat your oven to 375° and combine all of your ingredients except the flour into a large bowl and mix well.
Once they’re thoroughly mixed, slowly add your flour until it’s all mixed in.
From here on out, treat the dough like you would any other peanut butter cookie dough.
Roll your dough into balls, roll in sugar, and place on a greased cookie sheet. Flatten with a fork in a criss cross pattern to give them that classic peanut butter cookie look 🙂
Bake for about 10 minutes or until they’re golden brown and enjoy!
